  • An administrator shall ensure that:

    1.        Dietary services are provided according to 9 A.A.C. 8, Article 1;

    2.        A copy of the hospital’s food establishment license or permit under 9 A.A.C. 8, Article 1, is maintained;

    3.        For a hospital that contracts with a food establishment, as established in 9 A.A.C. 8, Article 1, to prepare and deliver food to the hospital, a copy of the contracted food establishment’s license or permit under 9 A.A.C. 8, Arti- cle 1, is maintained;

    4.        If a hospital contracts with a food establishment to pre- pare and deliver food to the hospital, the hospital is able to store, refrigerate, and reheat food to meet the dietary needs of a patient;

    5.        Dietary services are provided under the direction of an individual qualified to direct the provision of dietary ser- vices according to policies and procedures;

    6.        There are personnel members on duty to meet the dietary needs of patients;

    7.        Personnel members providing dietary services are quali- fied to provide dietary services according to policies and procedures;

    8.        A nutrition assessment of a patient is:

    a.         Performed according to policies and procedures, and

    b.        Communicated to the medical practitioner coordi- nating the patient’s medical services if the nutrition assessment reveals a specific dietary need;

    9.        A medical staff member documents an order for a diet for each patient in the patient’s medical record;

    10.     A current diet manual approved by a registered dietitian is available to personnel members and medical staff members; and

    11.     A patient's dietary needs are met 24 hours a day.
